After having trained under the hand of prestigious chefs such as Jean Paul Vinay, Jean Louis Neichel, Christian Bourillot, Jordi Butron, Jesus Oyarbide or Martin Berasategi, master of young creators in the Hoffman school, Manel Jimenez has created a daring and innovative kitchen, without forgetting the Basque and Catalan tradition, in this Sagardi group restaurant. The group, which also owns the Mirador restaurant in the Palau de la Musica and the Vildsvin restaurant in Calle Ferran, has taken on this elegant little place, built in 1851, which housed the mythical study of the fashion designer Balenciaga, as well as the unforgettable restaurant of Jean Luc Figueras, and has reformed it for something over a million euros. Manel creates exquisite dishes that remind us of traditional tastes, gizzards with squid, the daring fricassee with mushrooms and oysters, or more innovative dishes, like lobster with tortellini.
