Or the ecologic caviar of Riofrio, with vegetable couscous and creamy sauce of pistachios.
The creative new pasta a la carbonara, with home-made pasta, stuffed egg yolk and the high quality smoked iberic belly pork.
Try also the cod soup, a hot and light marzipan, mushrooms into julienne strips or the consommé of squid and duck, made out of picy spleen, its ink in gelatin, bean and kombu seaweed, or gamba’s tail and artichokes, which are made out of jelly of gambas’ corals and artichokes in textures.
